SNACK RECIPES
It's yuletide season
again and I feel obliged to share some of my favourite recipes. We'll take this
in bits.
Patacones
Ever since I
stumbled upon this delicacy on what my brother calls "German TV" (DW:
Deutsche Welle), I fell in love with unripe plantain (green plantain). This is
one of the ways I can eat green plantain without worrying about the taste (another
is unripe plantain porridge which BTW is so AWESOME). Below are the
ingredients, utensils and procedures used in making this delicacy and heard it
is a Latin American delicacy.

Very green plantains or nearly ripe plantains
for a sweeter variation
(The
plantain on the left is nearly ripe but that on the right is unripe but the
lighting makes it look ripe).
·
Lots of vegetable oil
·
A knife for peeling, scraping & cutting the
plantain into round chunky pieces
·
A deep cooking pot
·
Aluminium foil/ clean working area on which the
flattening will be done.
(I
used a small, deep pot because I was making the snack for a few people).
·
A spatula for dishing out the fried plantains
·
A pestle or any other utensil suitable for
flattening the plantains
Procedures
¨
Peel the plantains, scrape and cut into pieces
not to thin or too fat.
¨
Put oil in pot and set it on fire. When it is
really hot, put the cut plantains into the pot carefully to avoid splashing of
oil.
¨
Once the plantains begin to look yellowish,
remove from the oil and set on the working area or foil.
¨ When on the foil, flatten with a pestle and place them once again into the oil for another round of frying.
¨
Once the plantains begin to turn golden, remove
from the pot and dap with a kitchen towel. Alternatively, place them in a
colander for the oil to drip.
(The brown one is a product of the nearly ripe one).
Voila, your crunchy snack is ready for consumption. Enjoy!!!!.
